One of my fondest restaurant memories is from Bela Vegetarian Restaurant in North Hampton, Massachusetts. It is one of my go-to destinations whenever I'm in the area. Bela stoked my love of soups and enhanced my appreciation for the preciousness of food. Bela is the only restaurant I've ever eaten at that actively discourages over eating. Given the over portioning that typifies most American restaurants, Bela's consciousness-raising table tents that reinforced the need to eat proper portions really stood out. Whenever I make a soup at home I strive to recreate the experience- and gratitude- of those hearty cups of soup (and their fresh Irish soda bread).
We made this soup a few Friday's back. My husband was skeptical of whether it would satiate his hunger, but the recipe from Half Baked Harvest did not disappoint. Working together the cooking time breezed past and we savored the results. The red curry paste added the perfect level of heat without making the soup "Thai" hot.
