I found and followed this recipe from Pure Wow. Using a spiralizer I quickly transformed the cucumbers into these beautiful noodles. The recipe estimated 10 minutes of prep time and that seemed pretty accurate. The dish was tasty and filling: a perfect lunch. The original recipe didn't include nutritional data so I ran these calculations: 315 calories, 21 grams fat, 5 grams carbs, 1 grams sugar, 11 grams protein, 2.5 grams fiber.
