I found this recipe at Pinch of Yum. The recipe calls for just a wee bit of oil so you have to keep the veg moving to avoid black burnt potato. In the end it's so worth the focus that it takes to be totally in the moments of cooking the potatoes. This is a dish I will eagerly recreate. The original recipe included nutritional data but I made some minor tweaks (like not drizzling the finished dish with olive oil), so I re-ran the numbers for the way that I prepared the dish. Here were my nutritional stats: 235 calories, 19 grams fat, 23 grams carbs, grams protein, 4 grams sugar, 3 grams fiber.
