When COVID shopping a few weeks ago I made sure to buy dried grains, flours, frozen vegetables, and canned beans. I knew that I'd eventually want some hummus and yesterday I whipped up a batch. As a vegetarian, hummus has been part of my diet for thirty years. I've tried a lot of different recipes, and bought many store-bought varieties, but this recipe from Eva Zane's 1974 Middle Eastern Cooking is our favorite for making homemade hummus. Like all hummus recipes, the ingredients are straight forward and it's easy to whip up a batch in a food processor or blender. And like all hummus recipes, it's easy to modify with optional ingredients to suit your taste (red pepper, extra lemon, extra garlic, jalapenos, etc).
