I found this recipe at Do you Even Paleo? I needed a new side dish to compliment some leftovers and this recipe stood out for two reasons: speed and simplicity. The original recipe calls for either fresh or dried parsley and rosemary. I used dried because it's what I had on hand and I substituted olive oil in for the butter. The results didn't disappoint and there wasn't even a shred of uneaten carrot left on our plates. The next time I'll plan better and upgrade to fresh parsley and parsley- and I'll splurge and use butter or ghee too. The original recipe didn't include nutritional information so I ran these calculations: 69 calories, 3.5 grams fat, 6 grams carbs, 2 grams fiber, 3 grams sugar, 0.5 grams protein.
