Beet, Sweet Potato, and Fennel Salad


I found this recipe at Do you Even Paleo? I can't say enough how much I'm LOVING spiralized vegetable dishes. I bought my spiralizer at Aldi a long time ago and it had been sitting unloved in our cupboard since last summer- or maybe even the summer before. Well, I'm making up for lost time now with a series of dishes featuring spiralized vegetables in short order. This dish produces a naturally sweet and slightly tart result, with the beets, sweet potatoes, and fennel complimenting each other and the balsamic and lime vinaigrette setting the flavors. I can easily imagine making this dish to serve at a dinner party! If you have a family member who's wary of eating beets try this recipe. My husband claims to hate beets but he eat an entire portion of this salad. The original recipe lacked nutritional data so I ran the following calculations: 136 calories, 7 grams fat, 15 grams carbs, 3 grams sugar, 3 grams protein, 4 grams fiber.
